This easy-to-follow recipe is perfect for beginners, delivering a fragrant and flavorful dish every time.

Ingredients

  • 200 grams minced pork
  • 1–2 heads of Thai garlic (adjust to taste)
  • 9 red chilies
  • 1 tablespoon vegetable oil
  • 1 tablespoon water
  • 2 tablespoons oyster sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 1 handful of basil leaves (adjust to your liking)

Step-by-Step Cooking Instructions

Step 1: Prepare the Ingredients

  1. Pound the garlic and chilies together in a mortar and pestle until coarsely crushed.

Step 2: Stir-Fry the Aromatics
  1. Heat a pan over medium-high heat and add the vegetable oil.
  2. Once the oil is hot, add the pounded garlic and chilies. Stir-fry until fragrant but avoid overbrowning the garlic.

Step 3: Cook the Pork
  1. Add the minced pork to the pan and stir-fry, breaking it up into small pieces.
  2. Add 1 tablespoon of water to help cook the pork evenly.

Step 4: Season the Dish
  1. Add oyster sauce, soy sauce, sugar, and dark soy sauce to the pan.
  2. Stir everything together until the pork is well-coated and the sauce is evenly distributed.

Step 5: Add the Basil
  1. Turn the heat to high, then add the basil leaves.
  2. Stir briefly until the basil wilts, then immediately turn off the heat to preserve the basil’s vibrant color.

Step 6: Serve
  1. Plate your Pad Kra Pao Moo Sab and serve it with steamed rice, a crispy fried egg (Khai Dao), and a side of chili fish sauce (Prik Nam Pla).

Tips for Success

  • Use Thai garlic for a more aromatic dish. Slightly crush it without peeling completely for added flavor.
  • For extra heat, add bird’s eye chilies and pound them thoroughly.
  • Opt for small, tender basil leaves or red basil for a more fragrant dish.
  • To keep basil aromatic, use it fresh and cook it right away.
  • Adjust the consistency: add more water for a saucier dish or stir-fry longer for a dry version.
  • Use minimal oil to avoid an overly greasy dish, as oyster sauce adds natural richness.

With these simple steps, you can create a classic Pad Ka Prao Moo Sab that’s full of bold Thai flavors and perfect for any meal. Enjoy the fragrant aroma and spicy kick of this iconic dish!
